BLUEBERRY SORBET
1/2 c white sugar 1/2 c water 1 c orange juice 1 tbsp lemon juice
In saucepan, combine blueberries, sugar, water, orange and lemon juices; simmer for 1O minutes. Chill then freeze according to instructions below. Makes 6 servings of 1/2 cup each.
Freezing and Serving Sorbets: Freeze in ice cream maker or transfer to pan or bowl and freeze until barely firm. Then, either process in food processor or beat with electric mixer until smooth. Transfer to freezer container and freeze until firm. Remove from freezer 15 - 30 minutes before serving, or until it is soft enough to scoop. Garnish with blueberries. Frozen Blueberry Snow: To make snow, simply place in food processor when cold with one egg and beat until frothy and light in color. |
