BLUEBERRY PUDDING CAKE
2 c blueberries 2 tbsp lemon juice 1 c flour 2 tsp baking powder 1/4 tsp salt 1/2 tsp nutmeg 3/4 c sugar (first amt.) 1/2 c milk 1 egg 1/4 c butter (melted) 1 tsp vanilla 1 c sugar (second amt.) 1 tbsp cornstarch 1 c boiling water Place blueberries and lemon juice in an 8x8 inch pan. Mix flour, baking powder, salt, nutmeg, and 3/4 cup sugar. Beat in milk, egg, melted butter, and vanilla. Spread over berries. Mix 1 cup sugar with cornstarch and sprinkle over batter. Pour boiling water over all. Bake at 350F for 40 - 50 minutes. |
