BLUEBERRY CREAM FLAN
1/2 c white sugar 1 1/2 tsp baking powder 1/3 c soft margarine 2 egg whites 1 tsp vanilla 3 c blueberries (fresh or frozen (don't thaw) Topping: 2 tbsp all-purpose flour 2 c low-fat plain yogurt 1 egg, lightly beaten 2/3 c white sugar 2 tsp grated lemon or orange rind 1 tsp vanilla
In food processor or mixing bowl, combine flour, sugar, baking powder, margarine, egg whites and vanilla; mix well. Press into bottom of a 10 inch square cake pan, springform or flan pan; sprinkle
with blueberries. Topping: In bowl, sprinkle flour over yogurt. Add egg, sugar rind and vanilla; mix until smooth. Pour over blueberries. Bake
in 350 degree oven for 60 to 70 minutes or until golden. Serve warm or cold. Makes 1 2 servings.
