BLUEBERRY CAKE OR PUDDING
1 c white sugar 2 c flour 1/2 tsp nutmeg 1/2 c butter 3 c fresh blueberries 3 eggs
Cream together the butter and sugar. Add beaten egg yolks, then the flour, saving a bit for flouring the berries. Fold
in beaten egg whites and nutmeg. Flour berries well and stir in. Bake in a sponge or angel cake pan in a 350 degree
oven for about an hour. If used as a cake, no icing is necessary. If served as pudding, use the following sauce:
Brown Sauce: 2 tbsp butter 1/3 c brown sugar 2 tbsp flour 1 c boiling water 1/4 tsp salt 1/4 tsp vanilla Melt the butter; add flour and salt and stir until smooth. Add the sugar and brown, stirring constantly. Remove from heat and add boiling water. Bring to a boil. Add vanilla and serve hot. |
