2 lb. fillets or a whole fish 1 tsp pepper 1 tsp onion juice 2 c soft, fine bread crumbs 2 tbsp melted butter or fat 1 tsp sage or summer savory milk to mix the dressing (about 1/2 c) 1 tsp salt Method: Clean the fish, or wipe fillets with a damp cloth. Mix the other ingredients to form a dressing and stuff the fish. If fillets are used, place one on a greased pan with the dressing on top, and the other over the dressing. Sauce: 3 tbsp butter or melted fat 3 tbsp flour (sift and blend with butter) 2 c milk 1 tsp salt Cook until thick in double boiler stirring constantly. Pour over fish and bake at 400 degrees allowing 10 minutes for each inch of thickness. Serves 6 -7.
