PUMPKIN PIE
Ingredients:
1 tbl. melted butter
2 c. pumpkin
3/4 c. brown sugar
1/2 tsp. salt
1 - 2 tsp. cinnamon
1 -2 tsp. ground ginger
1/4 - 1/2 tsp. nutmeg
1/4 tsp cloves (optional)
1/4 tsp. allspice (optional)
2 oz. molasses
1 c. scalded milk
1 (5 oz.)can of evaporated milk
2 eggs (beaten)
Method:
1. Cook pumpkin, sugar, salt, spices
and molasses in a saucepan over moderate heat until thick (5 -7 minutes).
2. Stir in both kinds of milk and eggs and cook over low heat for another
five minutes.
3. Pour into a pie shell and bake for 15 minutes at 425 degrees.
4. Turn the heat down to 350 degrees and bake for another 45 minutes.
5. Top with whipped cream or whipped topping if you wish.
